Ingredients

yellow onions
[thinly sliced]

extra virgin olive oil
3
cloves
garlic
[minced]

tsp
fresh thyme
1/2
cup
unsweetened macadamia milk
1/4
cup
cashew cream

oz
dry chickpea pasta
⅛ - ½
tsp
sea (or Himalayan pink) salt & pepper
[adjust to taste]
Instructions
Heat olive oil in a large pan over medium low heat.
Add sliced onions and cook slowly, stirring occasionally, until deeply golden and caramelized.
Add garlic and thyme and cook until fragrant.
Stir in macadamia milk and cashew cream and gently simmer until silky.
Cook chickpea pasta according to package instructions and drain.
Add pasta to the sauce and toss to coat evenly.
Season with sea salt and black pepper and serve warm.
