Ingredients
  

  • 2 large yellow onions [thinly sliced]
  • 2 Tbsp extra virgin olive oil
  • 3 cloves garlic [minced]
  • 1 tsp fresh thyme
  • 1/2 cup unsweetened macadamia milk
  • 1/4 cup cashew cream
  • 8 oz dry chickpea pasta
  • â…› - ½ tsp sea (or Himalayan pink) salt & pepper [adjust to taste]

Instructions
 

  • Heat olive oil in a large pan over medium low heat.
  • Add sliced onions and cook slowly, stirring occasionally, until deeply golden and caramelized.
  • Add garlic and thyme and cook until fragrant.
  • Stir in macadamia milk and cashew cream and gently simmer until silky.
  • Cook chickpea pasta according to package instructions and drain.
  • Add pasta to the sauce and toss to coat evenly.
  • Season with sea salt and black pepper and serve warm.
