Ingredients
  

  • 2 slices sprouted grain bread
  • 2 eggs [pasture raised]
  • 1 scoop collagen peptides
  • 1-2 Tbsp goat cheese
  • 2 tsp extra virgin olive oil
  • ⅛ to ½ tsp sea (or Himalayan pink) salt & black pepper [to taste]
  • ½ avocado [sliced]
  • microgreens or baby arugula [to your liking]

Instructions
 

  • Crack the eggs into a small bowl and whisk gently.
  • Add the collagen peptides to the eggs and whisk again until fully dissolved.
  • Heat a small pan over medium heat with a light drizzle of extra virgin olive oil.
  • Pour the egg mixture into the pan and cook gently, stirring or folding until softly set.
  • Season the eggs with pink salt and black pepper.
  • Lightly toast the sprouted grain bread.
  • Spread goat cheese onto one slice of toast.
  • Add the cooked eggs on top of the cheese.
  • Layer with avocado and greens.
  • Top with the second slice of bread, slice if desired, and enjoy warm.
